Hello again fellow bakers, Maid Mari is back with more baking shenanigans! I found some vanilla bean paste at the grocery store and of course my first thought was: "That would make an awesome cookie"....
This recipe is another super easy one, so let's get to it! 。: ゚૮ ˶ˆ ﻌ ˆ˶ ა ゚: 。
Today’s recipe: Vanilla Bean Cookies!
Ingredients:
2 3/4 cups all-purpose flour
1 tsp baking soda
1 tsp salt
1 cup unsalted butter, softened
1 1/2 cups granulated sugar
2 large eggs
1 tsp vanilla extract
~1 tbsp vanilla bean paste (more or less, depending on your preference)
Instructions:
1. Preheat oven to 375∘.
2. Combine the flour, baking powder, and salt in a bowl and set aside.
3. Combine the butter and sugar until fluffy (it should look like wet sand, try not to overmix
this step or the cookies will come out a weird, cakey texture).
4. Add the eggs and mix until well combined.
5. Add in the vanilla bean paste. I added around 2 tbsp for a strong vanilla flavor.
6. Add in the flour mixture until it forms a tacky dough.
7. Form balls of cookie dough, around 1/8 cup, or 2 tbsp.
8. Bake for 8-12 minutes. The time it takes will depend of the material of your baking sheet.
9. Enjoy!
