So therefore I am providing you with a certified banger™️ blueberry muffin recipe today :3
HOWEVER!!
There are so many factors that can go into a muffin so I am offering you two modifications for ultimate muffin enjoyment!
OK, let’s get into these muffins!
Mari’s Best Blueberry Muffin (with alternative flavorings)
Batter ingredients:
2 cups all-purpose flour
1/2 tsp baking soda
1 tbsp baking powder
1/8 tsp salt
1/2 tsp ground cinnamon
(Optional - see note) 1/4 tsp nutmeg
1/2 cup butter, melted
3/4 cup granulated sugar
2 large eggs
1 tsp vanilla extract
1 cup whole milk
1 tbsp lemon juice
(Optional - see note) zest of 1 lemon
1 18 oz container blueberries, washed and dried
(Optional - see note) Streusel Topping ingredients:
2 tbsp butter, fridge cold and cubed
1/4 cup flour
2 tbsp granulated sugar
1/4 tsp ground cinnamon
Instructions:
Preheat oven to 375∘.
If using Streusel Topping: Combine the ingredients for Streusel Topping in a bowl until coarse crumbs and set aside.
If using lemon zest: Zest one lemon and set aside
In a separate bowl, combine flour, baking soda, baking powder, salt, cinnamon, and nutmeg (if applicable).
In another bowl, combine the melted butter and sugar until well-combined. (See note)
Into the sugar and butter mixture, add the eggs one at a time. When well-combined, add the vanilla.
In another bowl, combine the milk and lemon juice and let sit until needed. It will curdle, this is normal. We are trying to imitate buttermilk.
Now, into the sugar mixture, alternate adding the dry-mix and the buttermilk substitute.
If using lemon zest: Mix in your lemon zest.
Fold in the clean blueberries.
Spoon the mixture into your muffin tins, about 2/3 of the way full.
If using Streusel Topping: Add a sprinkle of Streusel Topping on each muffin.
Bake for 24 minutes, or until a toothpick comes out clean.
Recipe Notes:
If you like more spiced muffins, I’d recommend the nutmeg. However, my personal preference is to leave it out. Please do not use nutmeg and lemon zest together!
While lemon zest is optional, I’d recommend it ONLY if you like lemon or citrus dessert. Please do not use lemon zest and nutmeg together!
If you don’t like streusel toppings, sanding sugar (raw cane sugar), will also make a great topping. Toppings are completely optional.
If you’re starting with cold butter for the melted butter, microwaving the butter for 30 seconds on highest power setting and mixing with a spatula until melted will achieve the desired butter consistency. (DON’T MELT THE STREUSEL BUTTER PLEASE)
I personally used the lemon zest and left out the nutmeg. I felt this would suit the flavors I like more, but opinions on certain tastes is completely subjective!
